Quick and Easy Potato and Broccoli Soup

Ingredients:
3 cups cubed potatoes
3 cups broccoli spears
3 leeks or onions, chopped (2 cups)
3 cups vegetable broth
¼ cup (or more) loosely packed fresh basil
Pepper, to taste
1 cup oat, multigrain, or nonfat soy milk
Chopped chives or green onions
- In a soup pot bring potatoes, leeks, broccoli, vegetable broth, and basil to a boil. Lower heat cover, and simmer 20 minutes, until potatoes, broccoli and leeks are tender.
- Process mixture in a blender until smooth (or use an immersion blender). Pour into a bowl and stir in milk of your choice. Serve hot, or cover and chill. Top with chives or green onions just before serving.
