Shawn's Low Fat Bran Muffins from Shawn Bollig at Energy Center Fitness Club
These delicious and healthy bran muffins were a big hit at our Customer Appreciation Day. Shawn had so many requests for the recipe, we decided it would be perfect for our next newsletter.
Ingredients:
1 cup Whole Wheat Flour
1-1/2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Ground Cinnamon
2 cups 100% Bran Cereal (Fiber One is a good choice)
1-1/4 cups Organic Unsweetened Soy Milk
1/3 cup Brown Sugar
1 Egg
1/2 cup Applesauce
- Heat oven to 400? F.
- Mix cereal, milk and sugar in a bowl; let stand 5 minutes.
- Mix flour, baking powder, baking soda and cinnamon in another large bowl.
- Stir into cereal mixture the egg and applesauce; add to flour mixture; stir just until moistened (batter will be lumpy).
- Spoon batter into muffin pan sprayed with no stick cooking spray, filling each cup 2/3 full.
- Bake 18-20 minutes or until golden brown.
